I had the opportunity to learn how to make a delicious Christmas roll cake with Madeleine academy couple of years ago. Adele (Madeleine's founder) is super nice and friendly and gives very accurate and practical advice to make sure you achieve the desired dessert. It was a success and very funny experience to live!
Exceptional courses! I thoroughly enjoyed every pastry I made through Madelines academy. Many of the recipes were out of my comfort zone, but Adele made them approachable and I was happy with my results. I took away many techniques and skills I'll carry on into future baking endeavors!

Very easy to understand as a beginner, and the end products never disappoint! Anyone should consider taking Adele's classes as she truly is a wonderful teacher :)
Adele is a natural born teacher, but the kind of teacher that also feels like a friend who really does believe you can bake!!! It's her way of making even the more advanced French pastries seem achievable that is her gift. She taught my teenager how to make a galette des rois from scratch, including puff pastry, and he can barely make his bed at home 😅 Her way of deconstructing a recipe and her way of teaching you that French baking is joyful and not to be feared is what makes her so special!
